Phase 1: Cinderhouse Setup Tasks

0. Validation & Pre-Commitment (Do this before spending money)

  • [ ] Test the Menu: Host a test-cook for 10-20 friends/family to prove you can manage the timing and quality of the smoked meats at a slightly larger scale.
  • [ ] Scout Locations: Speak to organizers of local markets, food festivals, or pub landlords. Ensure they allow BBQ stalls and find out what their pitch fees and waiting lists look like.
  • [ ] Ringfence the Budget: Set aside ~£4k for the DIY/Hybrid garage build and pledge not to exceed it. Don't overcapitalize Phase 1.
  • [ ] Lock Down the Brand: Secure the "Cinderhouse" social media handles (Instagram/Facebook) and web domain before doing any public marketing.

1. Design & Planning

  • [ ] Draft 3x3m garage floorplan (showing sinks, tables, fridge, oven, hob, and side door access)
  • [ ] Electrician Check: Have an electrician verify if the existing garage consumer unit/cable can handle the load of a 13-amp oven + induction hob + water heater simultaneously.
  • [ ] Source quotes/links for specific water tank systems (e.g., Flojet) vs Mains plumbing
  • [ ] Source quotes/links for 13-amp plug-in convection oven & portable induction hob
  • [ ] Source quotes/links for knee-operated handwash basin & double prep sink
  • [ ] Source quotes/links for PVC hygiene cladding

2. EHO & Compliance Preparation

  • [ ] Draft HACCP section: Cross-contamination prevention (Indoor/Outdoor flow)
  • [ ] Draft HACCP section: Rapid cooling procedure for large meat joints
  • [ ] Draft HACCP section: Water tank sanitization schedule
  • [ ] Download/Print FSA "Safer Food, Better Business" pack
  • [ ] Register food business with local council (28 days before trading)

3. Physical Build (Garage)

  • [ ] Clear out a 3x3m footprint in the Edwardian garage
  • [ ] Erect stud partition wall & insulate
  • [ ] Install PVC cladding on walls (or hire pro for plastering)
  • [ ] Lay heavy-duty vinyl/epoxy flooring
  • [ ] First fix electricals & upgrade consumer unit if needed (Electrician)
  • [ ] Install side door fly screen curtain & electronic fly killer (EFK)

4. Equipment Fit-Out

  • [ ] Install sinks and connect plumbing (Tanks or Mains)
  • [ ] Move in fridges, prep tables, oven, and hob
  • [ ] Second fix electricals and lighting (Electrician)
  • [ ] Install high-powered domestic extractor hood (vented outside)

5. Final Launch Steps

  • [ ] Deep clean and sanitize all surfaces
  • [ ] Host EHO inspection
  • [ ] First test-smoke batch!
